and just use whatever move is powerful with a type advantage

I think I can explain it fluid dynamics wise
you have two waves coming in on shore on either side, and they have constructive interference going the other way in the middle of the two (basically, the current at the side of the waves add together) and thus makes a strong current that pulls towards the ocean between the waves

That's actually a really good mnemonic device for that, and I don't think I ever realized that all the Eeveelutions, plus Dragon, made up all the special types.
