though instead of Overlord where it's mostly scene/character detail, I think the Shangra-la author probably does just include 10 million little side stories
every volume of the manga has 1-2 'short' stories in it, kind of like the SLF Mini things at the end of some anime episodes
and I get the feeling the WN/LN is completely that

Caught up, all 203 chapters
I've got my issues with the SLF manga (same with the anime), but overall it's pretty good
So by my math:
The novel (900 chapters) has covered ~2/3 of the overall story
The manga(200 chapters) has adapted ~ 1/4 of the novel
The anime (36 episodes) has adapted ~ 1/2 of the manga

We are going to have a break before more, but I kind of think C2C will continue making it. There are rumours that elena the witch is getting a S2, and they already announced isekai sword S2, so I hope they do those first
I feel strongly saying, this could be adapted much quicker in parts
but them outpacing the manga would be bad, the novel is kind of a mess of random tangents and side stories
there is enough material to easily get them through a S4
but it's kind of crazy how long this is in comparison to other long adapations
the manga would need to be over 1000 chapters minimum
and you'd get 8-10 seasons of anime out of that

also I'd call this a light spoiler
the weathermon fight is the shortest in the series, all other fights are 50% longer (in terms of chapter count) at a minimum, the S4 fight will be 400% longer by my estimation

like Pika said it will come down to production schedules
but I would bet serious money on this getting a S3/S4
after that, idk
I feel like C2C commiting to doing 4 cours right off the bat, they at least had high hopes going in
S5 arc would likely not fit into a single 2 cour season
