Korean food exports are taking over in general
you had a wave of state-sponsored Vietnamese food exports for a while
but in the last 5 years S.Korea has put an absurd amount of money into their global image
which (even if you find it silly) invovles heavily pushing stuff like this
food diplomacy is genuinely strange to me, because I think it works but don't understand why
S.Korea provides money to Samyang Foods to buy unlimited advertising in various global markets
it's kind of like what we do in the US for DEI bullshit
but Vietnam and S.Korea do it heavilly for food
like, if you go into any s.korean restaurant in America that's opened in the last couple years
they all are funded by state grants from S.Korea, get monthly revenue from the S.Korean government to pay rent, there are training programs where any chefs you hire get 12-18 months of free culinary education in S.Korea (+travel/housing)
and if the business goes under, you assume no liability risk
I'm sure it's not 100% of restaurants, people see trends and emulate too
but when I was chatting with one of the Kroean bakery owners near me, he basically said their government is obsessed with this rn, and you'd be stupid not to take the free money
even though he has zero interest in running an American bakery for more than a handful of years
but regardless
those Buldak noodles are fucking good anyway
I know this is veering into food autism
but imo I'm amazed that Western ready-made soups have become so terrible
meanwhile instant noodles have gone in the other direction
soup was always my go-to quick meal when I was younger, but unless I pay an absurd amount for bougie brands now I feel like they're pretty disapointing whenever I make one
ramen though, seems to just have a much higher floor, even the super cheap ones
(aside from that terrible crab one we tried Max)

it's also funny, because making a "healthy" soup is literally just chicken stock + 1 or 2 stable veggies like celery
but I don't even think they do that
all the soups are full of sugar and starchs and other nonsense that is shelf stable for longer
and I'm not claiming I don't want potatoes in my soup
I just don't want them to taste like ass because they're meant to survive 5 years
I feel like a single serving of soup is healthy enough, low-sodium/low-fat is a meme anyway

we have so many Vegetables from our garden we just make soups weekly
college, I used to just eat that soup until it was gone, mostly to save money
now that I'm less broke though, I like not awlays eating the same thing every meal for 3+ days
yeah, it's just me being lazy mostly, could totally add stuff to the soup over time or w/e
but, I'd also just rather there were better single serving soup options as well
