Korean food exports are taking over in general
you had a wave of state-sponsored Vietnamese food exports for a while
but in the last 5 years S.Korea has put an absurd amount of money into their global image
which (even if you find it silly) invovles heavily pushing stuff like this
food diplomacy is genuinely strange to me, because I think it works but don't understand why
S.Korea provides money to Samyang Foods to buy unlimited advertising in various global markets
it's kind of like what we do in the US for DEI bullshit
but Vietnam and S.Korea do it heavilly for food
like, if you go into any s.korean restaurant in America that's opened in the last couple years
they all are funded by state grants from S.Korea, get monthly revenue from the S.Korean government to pay rent, there are training programs where any chefs you hire get 12-18 months of free culinary education in S.Korea (+travel/housing)
and if the business goes under, you assume no liability risk
I'm sure it's not 100% of restaurants, people see trends and emulate too
