I think, in general, very few people would think it's morally neutral to willfully run over stray dogs or cats that might be in the road.
And then, how much someone cares about moral consistency becomes a factor. Most people would think someone was a sociopath if they kept a dog in a cage too small to move around in for its entire life, but if it's a cow or something then it's totally okay. (or, at least, they can tolerate it if they try not to think about it)
X% of people might not eat meat because they really care about animals. X% might care enough to go vegan if there were non-meat alternatives (or soon, cultured meat alternatives) that tasted the same. X% of people might not give a shit either way, but might eat less or no meat if non-meat alternatives were cheaper and tasted the same.

I get that dogs/cats might be their own class of animal due to humans weird relationship with them

I don't think living vegan is some inherently undoable thing either, you can take supplements and make a "healthy" diet out of it
But I guess I still don't understand the moral component of it

none of the "meat substitutes" on the market are actually meat, just like almond milk isn't milk
that doesn't mean it's bad, it's just its own thing
lab-grown "meat" is also coming, but I have my doubts about that until its further along
I can "like" animals as much as I like the old oak tree in my back yard
but I'm not going to go to my local tree farm and chain myself to random trees to save them from becoming paper
