Fate is the introduction route, the ending is alright but it doesn't really feel accurate.

UBW is the route that you can most feel is canon imo, it makes a lot of sense and is what you'd call "normal"

HF is your finale. It's the culmination of everything you've learned and all questions answered, it's everything taken to the extreme.
