the time investment of watching a stream too, is an issue
this is how I handle coming back to things mid way
I hate twitch's website layout man. it's so annoying
I just throw the vods in my notes server with timestamps
if the streamer doesn't make collections for stuff it's a huge pain to find what you want
most streamers have youtube vod channels
nowadays
For 100% story based games, like Walking Dead or Life is Strange
I can't enjoy them playing by myself
Either play them in a group with freinds
or watch a let's play
twitch vods get deleted too
most streams have official or unofficial vod channels
none of the people i watch do
who do you watch
though, i don't watch anybody who only doess primarily twitch content

The let's players i watch these days are Lucahjin, Chronos, and Keith ballard. mostly. sometimes i'll go find some others, and check out a couple series if they have games i want to watch.
