I'm lazy about sharpening my knives

Onions are the top 1 thing I cut

And it's not even close

I remember what happened to the first guy who trained you

though I still usually cut onions by hand

unless I'm cutting a lot, then I'll use one of those quick-chop chunker things

I sharpen mine every month or so when I remember I possibly should

I bought a knife specially made for vegetables 4 years ago and it still is incredibly sharp

I have no idea how

my dilemma is I like having good knives, but then I'd feel guilty about using one of those shitty sharpeners that is quick but destroys your blade

No one at home eats any onions or most other vegetables unless I leave a sliced one in the fridge

and doing it properly takes more time than I'm willing to devote to knife upkeep

I have a whetstone that I just never use
