Im afraid to pick up BOTW. It seems like too much to take in.

Personally, I don't mind BOTW but its too much to explore. Where as odyssey is a collectathon, but its still good to play on free time

it depends on what kind of games you enjoy. if you enjoy basic platforming, then odyssey. if you enjoy adventure and goals, then BOTW
